Gluten Free Banana Chocolate Chip Muffins

  • 1 cup of gluten free oats
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 cup maple syrup
  • 1 cup of mashed bananas (approx. 3-4 bananas)
  • 1/2 cup of coconut or almond milk
  • 2 eggs
  • 2/3 cup of chocolate chips

Preheat oven to 350 degrees.  Grease or line muffin tin.  In a large bowl mix all dry ingredients thoroughly.  In a small mixing bowl whisk eggs, oil and maple syrup.  Mix wet ingredients into dry ingredients and add mashed bananas.  Mix well then add chocolate chips.  Bake 20-25 minutes until done.
