Gluten Free Apple Crumble Muffins

This is one of the easiest and most delicious gluten free apple crumble muffin recipes I have made.  The topping adds a hearty consistency to the top, or you can just sprinkle brown sugar over each one, like I did in this picture.  The combination of flours makes for a great texture (not to dense or too crumbly) and the shredded apple adds just the right amount of sweetness.  Enjoy!

 

Muffin Ingredients:

  • 3/4 cup brown rice flour
  • 1/2 cup oat flour
  • 1/4 cup coconut flour
  • 7 1/2 tsp Pixie Dust
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup Wholesome Sweeteners Organic Sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup Nutiva Organic Coconut Oil, melted (or organic butter, melted)
  • 3/4 cup organic milk (or organic almond milk)
  • 2 organic eggs
  • 3/4 cup shredded and peeled organic apple (about 1 apple)

Topping Ingredients:

  • 1/4 cup oat flour
  • 1/4 cup coconut flour
  • 2 tsp Pixie Dust
  • 1/4 cup gluten free granola (or gluten free oats)
  • 1/4 cup shredded coconut (optional)
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tbsp brown sugar
  • 1/4 cup organic butter, melted

Preheat oven to 400 degrees

For topping:

Whisk together flours and Pixie Dust. Stir in other dry ingredients.

Melt butter and add to dry ingredients. Stir until dry ingredients are coated. Set aside.

For Ingredients:

In large bowl, combine flours, Pixie Dust, cinnamon, sugar, baking powder and salt. Make a well in the centre.

In small bowl, beat together oil, eggs, and milk. Stir in apple.

Pour apple mixture into flour mix and stir until just moistened.

Grease 12 muffin cups and fill each ¾ full with muffin mix. Now sprinkle the crumble mixture over top.

Bake in 400 degree oven for 15 to 20 minutes, or until toothpick inserted into the middle of a muffin comes out clean.

ps.  My picture shows the muffin w/o the topping, only brown sugar sprinkled on top – another option.
