Gluten Free Apple Muffins -

Muffins, muffins, muffins!  We are on a roll.  So many recipes and they all seem to be turning out.  Yeah!

The latest is an apple muffin recipe which is delicious but the recipe only makes about 10 muffins (which doesn’t last long in our house).  So I recommend doubling this recipe.

It’s also a great use for those older apples in the house that everyone is trying to avoid eating.  The recipe calls for you grating the apples, which I really liked because it is quick and easy.  However you could also cut the apple up in chunks so that you bit into pieces while eating the muffins.


  • 2 cups almond flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 2 tsp cinnamon
  • 1 large organic apple, grated (or two medium organic apples)
  • 1 tbsp lemon juice
  • 3 organic eggs
  • 1/4 cup honey
  • 2 tbsp Nutiva Organic Coconut Oil, melted


Preheat oven to 325 degrees and grease or line muffin tin.

Combine dry ingredients in a large bowl.  Toss grated apple with lemon juice in medium bowl, and add remaining wet ingredients.

Stir wet ingredients into dry ingredients.  Fill muffin cups.

Bake for 20-25 minutes, until golden brown and toothpick inserted in center comes out clean.  Cool on wire rack.

Makes approx. 10 muffins

  1. I love this recipe and would love to use it for my son’s sack lunches, but there is a nut allergy in his class, so almond flour is out. Could I use something like cup for cup or quinoa flour?
