I’m always looking for fast, easy and healthy ways for my girls to grab a snack and go. These gluten free banana oatmeal muffins are perfect for just that. For breakfast, along with some yogurt and fruit, it’s like having a bowl of oatmeal…in a muffin.

- 3 organic bananas, mashed
- 1 cup almond milk
- 2 organic eggs
- 1 tbsp baking powder
- 1 1/2 cups gluten free rolled oats
- 1 1/2 cups oat flour
- 1 tsp Simply Organic Vanilla Extract
- 3/4 cup organic chocolate chips (optional – or add some dried fruit)
Preheat oven to 375 degrees and line muffin tin with liners.
Mix all ingredients except the chocolate chips together. Stir in the chocolate chips (or dried fruit).
Fill muffin liners 3/4 full and bake 20-30 minutes, until the edges just starting turning brown. They will be firm to the touch.
The muffins may stick to the liners when hot but are removed easily when cooled.
