Gluten Free Best Ever Banana Bread

 

Nothing tastes better than warm out of the oven banana bread, and with this gluten free best ever sweet banana bread recipe you won’t even need to butter it!  Enjoy it quickly because it won’t last long.

 

 

Ingredients:

  • 4 organic eggs
  • 2 cups organic mashed bananas
  • 1 cup Wholesome Sweeteners Organic Sugar
  • 1/2 cup organic applesauce
  • 1 tsp Simply Organic Vanilla Extract
  • 1/3 cup melted, Nutiva Organic Coconut Oil (or melted organic butter)
  • 1 1/2 cups brown rice flour
  • 1/2 cup sorghum flour
  • 1/2 tsp salt
  • 1 tsp baking s0da
  • 1/2 cup chopped pecans,walnuts or chocolate chips (optional, I didn’t use)

 

Preheat oven to 350 degrees.  Grease 5 x 9 inch loaf pan.
Mash bananas in a small bowl and set aside.

In a mixing bowl, beat the eggs lightly add mashed bananas, sugar, applesauce, coconut oil (or butter) and vanilla extract.  Mix thoroughly.

Add the wet mixture to the flours, salt and baking soda and mix together.
Pour batter into greased loaf pan and bake for one hour to hour and fifteen minutes or until toothpick comes out clean.

Remove from pan after resting for 10 minutes.

  2. I can take or leave bananas — they have to still be a tad green for me to enjoy — but banana bread, that’s always a plus in my book! And it’s healthy, so you don’t feel (too) bad about overindulging lol

    • I agree. I only eat green bananas which is why I make so many banana included recipes. As soon as they start to go soft I have to bake with them. Hope you like it!

  3. You green banana ladies are funny, I can’t eat green bananas but I also hate one that are too soft and spotted. I need them somewhere in the middle 🙂 The good thing about being banana picky is having lots of extras for desserts and smoothies. Can’t wait to try this recipe, Jenny!

  4. In an effort to make this bread a tiny bit healthier, I decreased the sugar to 3/4 cup and increased the flax seed to 1/4 cup. I think it is still delicious and my girls didn’t notice at all – still got devoured after school!

  5. Could you use 2 cups of all purpose gluten free flour instead of the mix of sorghum and sweet rice flour?

      I’m not sure if you could replace directly with 2 cups of gluten free flour. I personally don’t use flour mixes or gluten free flour. All of my recipes are from scratch. However if you do try it, and it works, let me know. 🙂
