This gluten free chocolate coconut bark recipe is quick, easy and so delicious. It’s the perfect after dinner treat that is sweet and rich with a touch of salt on the top (if you want). I made these for a dessert tray I prepared for my paleo friends and it was loved by all.
- 1 cup organic dark chocolate
- 1 cup Nutiva Organic Coconut Oil
- 1 handful coconut flakes
- 1 handful slivered almonds or pecans (optional) – I didn’t add
- sprinkle sea salt (optional) – I sprinkled a little on top as you can see in the picture
Use a double boiler or fill a pot with a few inches of water, then balance a smaller pot on top, so it just hovers above the water. Bring the water to a simmer. Break the chocolate into pieces, and melt it in the top pot.
Take the melted chocolate off the heat, and stir in the coconut oil until the oil melts, then add the coconut flakes and almonds.
Pour batter into an 8×8 pan, lined with parchment paper. Sprinkle the sea salt on top.
Put in the freezer for 15 minutes until solid, then cut into squares. Store the Chocolate Coconut Bark in the freezer.
