Gluten Free Chocolate Quinoa Cake

 

This is simply a deliciously rich gluten free chocolate quinoa cake.  Perfect for  birthdays and having guests over.  It’s a simple, fast and easy recipe that makes a beautiful and scrumptious cake!  Honestly it’s good!

 

 

Ingredients:

  • 2/3 cup white quinoa
  • 1 1/3 cup water
  • 1/3 cup almond milk
  • 4 organic eggs
  • 1 tsp Simply Organic Vanilla Extract
  • 3/4 cup organic butter
  • 1 1/2 cup Wholesome Sweeteners Organic Sugar
  • 1 cup organic cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp sea salt

 

Wash quinoa in cool water, drain and add 1 1/3 cup of water in a pot.  Heat to simmer, cover and cook until quinoa is soft and has absorbed all the water, about 18 minutes.  Spread flat to cool on a cookie sheet.  Should produce about 2 cups.

Start with all the ingredients at room temperature.  In a food processor, combine quinoa, milk, eggs, vanilla and butter.  Blend until smooth, about 5 minutes, scraping down sides halfway through.  Add sugar, cocoa powder, baking powder, baking soda, salt and puree 2 more minutes.

Pour into two 9 inch greased cake pans.  Bake for 25 minutes at 350 degrees, rotate and continue for another 25 minutes.  The top should spring back when touched.  A toothpick will come out sticky, but dark, instead of shiny.

Rest in pan for ten minutes before removing.  Set upside down on wire rack to cool.

CHOCOLATE FROSTING:

Ingredients:

  • 1/2 cup of organic butter
  • 2 cups of icing sugar
  • 1/4 cup organic cocoa
  • 1 1/2 tsp Simply Organic Vanilla Extract
  • 1-2 tbsp almond milk (depending upon desired consistency)

  1. Looks awesome Jenny! We buy our quinoa from Costco and although it does not say “white” quinoa, it is definitely not the red quinoa… or is there specifically “white” quinoa? Can’t wait to try this! Wendy
