Gluten Free Coconut Cream Bars

It takes no time at all to prepare, there’s no cooking involved and you will be rewarded with a rich, creamy, coconut and chocolate treat!

 

Ingredients:

  • 2 1/2 cup organic shredded coconut (see TIP below)
  • 1 can (14oz) condensed milk
  • 2 cups of powdered sugar
  • 1/2 cup organic chocolate chips (or more depending on chocolate thickness)
  • 2 tbsp organic butter (or Nutiva Organic Coconut Oil)

Directions:

In a large bowl stir together coconut, condensed milk and powdered sugar.  Once combined, press into a greased 9X13 pan and put in freezer until set (about an hour).

Before taking the pan out of the freezer, melt chocolate chips and butter (or coconut oil) in the microwave.  Make sure you place in microwave for 30 second increments, stirring each time in between until chocolate is melted.  Do not over cook!

Take bars out of the freezer and cover bars in the pan with a layer of chocolate. Put the pan back in the freezer to set (another 10-30 minutes) and then remove and cut into squares.

TIP:  If your bars seem too gooey as you are putting them in the pan add more coconut.  You want them to be slightly sticky but not runny.

You can also cut these into bars and dip them so that they are completely covered in chocolate.  If you do, put them on wax paper to set.

If you just cover the bars in  a layer of chocolate as I have done.  Cut bars before chocolate hardens, or the chocolate will crack (mine did :))
