Breakfast, lunch, dinner…it gets mind numbing to come up with different menus each day, especially when you have dietary restrictions. So anytime that a new meal is a hit in my house, I am always so relieved. This gluten free dijon chicken recipe only has 6 ingredients (and that’s including the chicken). So simple to make, an easy last minute meal and the sauce is delicious. I made this last night, no prep work what so ever, and not a bite was leftover.
- 4 boneless, skinless organic chicken breasts
- 1/2 cup Dijon mustard
- 1/4 cup organic maple syrup
- 1 tbsp rice wine vinegar (or apple cider vinegar)
- Salt & pepper
Preheat oven to 425 degrees.
In a small bowl, mix together mustard, syrup, and vinegar. ( I used extra vinegar to make the sauce more tangy – taste sauce and alter to your preference).
Place chicken breasts into 9×13 greased baking dish. Season with salt & lots of pepper. Pour mustard mixture over chicken. Make sure each breast is coated.
Bake for about 30-40 minutes.
Season with chopped rosemary.
