I was a little skeptical with this recipe that I adapted from My Recipes.   Chocolate chips cookies with only 6 ingredients (well 7 because I added vanilla) and none of those ingredients flour of any kind.  But I figured anything with chocolate chips in them would be readily consumed in our house.

What a pleasant surprise!  Presentation of these cookies – perfect!  Taste…great! Not to mention the fact that these cookies took about 2 seconds to make.  Now keep in mind that I used almond butter in place of peanut butter, but you could do either.  However I guarantee you, you will not be disappointed.

Preheat oven to 350 degrees.  Line cookie sheets with parchment paper.

Combine the first 6 ingredients into a medium size bowl until well mixed.  Add in chocolate chips.

Drop by spoonful onto parchment paper leaving enough space between each cookie to spread.

Bake for 14 minutes or until puffed and lightly browned.  Cool on cookie sheet for 5 minutes before transferring cookie to wire rack to cool another 15 minutes.

That’s it!  Simply right?

  1. Delicious! And loved by my biggest critic who does not like nuts or nut butters (what she doesn’t know won’t hurt her!). I could not get the chocolate chips to stick in the mixture – probably due to the lack of flours so I ended up pushing the chocolate chips into my balls before putting them on the cookie sheet. I will probably decrease the choc chips next time because I ended up wasting some. Thanks, Jen – another winner!!!

    • I’m glad they were well received. Just so you know I didn’t even form them into balls. I just spooned them onto the cookie sheet and tried to keep them tidy. They turned out looking perfect in my eyes!

  2. I can’t wait to try these with almond butter! It will be interesting to see if I can get them past my picky girl, who says she doesn’t like almond or peanut butter, but we shall see… If not, they are all MINE 🙂

      This is by far one of my most favorite recipes to date. Surprisingly easy, delicious and pretty nutritious! I thought the almond butter was nice, as it made them taste more like chocolate chip cookies, rather than peanut butter cookies. I guess it depends on one’s preference. Anyway let me know if you do end up making these and tell me what you think. Sometimes it’s nice when you’re the only one in the house who likes something….more for yourself!!
