Yummy gluten free gingerbread cake recipe! It’s the right amount of spicy, easy to make and tastes great with a little whip cream or ice cream on the side! It’s a great snacking cake for the kids to pack in their lunch or for a picnic.
- 1 cup brown rice flour
- 1/3 cup sorghum flour
- 1/6 cup oat flour (just half of 1/3 cup)
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp ginger
- 1/2 cup brown sugar
- 1 tsp Simply Organic Vanilla Extract
- 2 organic eggs
- 1/3 cup organic butter, melted
- 1/4 cup molasses
- 1/2 tsp baking soda
- 1/2 cup boiling water
Preheat oven to 350 degrees. Combine dry ingredients, mix well. In a mixing bowl, combine butter, molasses, eggs and beat well. Add to dry ingredients and blend.
Add baking soda to boiling water and quickly blend into batter. Pour into well greased 8X8 pan and bake for 30 minutes or until done.
