We just returned from a trip to Palm Springs where we stayed at the wonderful Casa Madrina.  Laura Morton Design created an amazing garden that attracts a variety of birds and butterflies.  Our family was most intrigued by the vast quantities of hummingbirds that we would see daily.

Upon our return my girls wanted to get back into the kitchen and bake a cake.  When they found out there was something called Hummingbird Cake they thought that would be a nice reminder of our trip.

This delectable cake is full of bananas and pineapple and is slightly sweet without being too rich.  Of course we couldn’t pass up putting cream cheese icing on top but you could easily do without.  We also chose not to add any pecans but feel free to add them if you like.



  • 1 1/2 cups white rice flour
  • 1 cup tapioca flour
  • 1/2 cup potato starch
  • 7 1/2 tsp Pixie Dust
  • 1 cup Wholesome Sweeteners Organic Sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 organic eggs, beaten
  • 1/2 cup organic apple sauce
  • 1/2 cup organic butter, melted
  • 1 1/2 tsp Simply Organic Vanilla Extract
  • 1 – 8oz. can crushed pineapple with juice
  • 1½ cups chopped pecans, divided (optional)
  • 2 cups organic bananas, chopped

Cream Cheese Frosting

Combine rice flour, tapioca flour, potato starch, Pixie Dust, sugar, baking soda, salt, and cinnamon in a large bowl.
Add eggs, melted butter, and applesauce. Stir by hand until the dry ingredients are moist.
Stir in vanilla, pineapple (with juice), 1 cup of pecans, and bananas.
Spoon batter into a greased and floured Bundt cake pan (use rice flour to dust pan).

Bake at 350 degrees for 45 – 50 minutes or until an inserted toothpick comes out clean.
Cool in pan for 10 minutes. Remove from pans and cool completely. Spoon cream cheese frosting (recipe below) over the top of the cake, allowing it to drip down the sides. Sprinkle with chopped pecans.

Cream Cheese Frosting
Combine cream cheese and butter; beating until smooth. Add powdered sugar and vanilla. Beat until light and fluffy.

    • Dana….so good to hear from you. The trip was amazing and so relaxing. Now back to real life and all the chaos. This cake is delicious if your kiddos like bananas and pineapple. Give it a try 🙂
