Gluten Free Oat Chocolate Chip Bars

Gluten Free Oat Chocolate Chip Bars -

My girlfriend Michelle, from Vancouver, turned me on to this easy and yummy recipe.  It literally takes 10 minutes to combine and 15 minutes to bake – so much easier than individual chocolate chip cookies!

Put oats in food processor and process until finely chopped. Set aside.
(I skipped this step because I like the oats in be in full form)

In a large bowl beat together butter and sugars until well blended. Beat in egg and vanilla.

In a small bowl, combine flour, baking soda and salt. Stir in chipped oats.
Add flour mixture to butter mixture. Stir until just blended. Stir in chocolate chips.

Drop mounds of dough over entire surface of greased 9X12 pan. Using fingertips gently press dough evenly into pan and smooth surface with metal spatula.
Don’t worry if dough doesn’t completely cover pan, the odd small gap will spread out during baking.

Bake at 350 for around 15 minutes or until golden around the edges. Let cool in pan on wire rack for 15 min. Cut into bars and remove to wire rack. Let cool completely.

NOTE:  While my girlfriend made them at sea level, I’m in the mile-high city and it took an extra 5 minutes of baking 🙂

    • Yes sorry…I just updated it. However they are quite sweet (my kids and husband don’t seem to mind) but you could try cutting that back a bit I think.

  1. I happen to have all the ingredients in the house so I will make this tomorrow morning! They look superb!! Gf too! Yummmm!

  2. These are great – you don’t even miss the gluten! So easy too! I only had once cup of chocolate chips on hand and it turned out to be plenty. When I make them again, I will continue to use only one cup?

    • Thanks again Kristi….I’m glad you liked the Oat CC Bars. I think they are super simple and when the girls want cookies and I don’t have a lot of time, these work in their place. As for the chocolate chips, if one cup works for you, then just do one cup.

      Talk soon…j
