PF Changs is one restaurant with a good gluten free menu that we all enjoy going to. However since it’s not always possible to go out I decided to bring Chinese food in. This gluten free Sweet and Sour Chicken recipe takes a bit of time to prepare, but is well worth the effort. The sauce and chicken taste great over rice with some steamed veggies on the side.
- 3-5 organic chicken breasts, cubed
- salt and pepper to taste
- 1/2 to 1 cup cornstarch
- 1/3 cup Nutiva Organic Coconut Oil
Rinse chicken, trim off fat or extras and then cut into 1 inch cubes. season with salt and pepper. Dip chicken into cornstarch (I also added some salt and pepper to the cornstarch) and coat all the way. Heat some coconut oil in large skillet and cook chicken until browned. Depending upon the size of your pan you will have to do this in shifts so as not to over crowd the chicken. Place browned chicken in a baking dish. (3 chicken breasts can be in a 9×9 but 5 chicken breasts fits better in a 9×13.)
- 1/2 cups organic brown sugar
- 4 tbsp organic ketchup
- 1/2 cup white distilled vinegar
- 1 tbsp Bragg’s Liquid Aminos
- 2-3 cloves garlic, minced
Whisk until smooth. Then pour evenly over already browned chicken in baking dish. Turn chicken so the sauce gets on both sides and then put in the oven at 350 degrees for 15 minutes. Turn chicken again and then cook for 15 more minutes.
