It was recently my dad’s birthday, and these were his favorite cookies. My mom would make them triple the size and they were practically a full meal when you ate one. Thankfully my mom loves to bake so much, that she adapted the original recipe to make these gluten free thin oat rolled cookies filled with dates so that we can continue to enjoy them. If you like matrimonial squares (date squares) then you will love these! Happy Birthday Dad…we miss you!
- 1 cup organic butter, softened
- 1/4 cup brown rice flour
- 1/4 cup white rice flour
- 1/2 cup sweet white rice flour
- 1/4 cup almond flour
- 2 tbsp coconut flour
- 2 tbsp millet flour
- 2 tbsp Pixie Dust
- 2 cups gluten free rolled oats
- 3 tsp baking powder
- 1 tsp Simply Organic Vanilla Extract
- 1 cup organic brown sugar, firmly packed
- 1/2 cup organic milk
- 2 cups of dates, cut up
- lemon zest
Cream the butter until fluffy and add vanilla extract. Gradually add the brown sugar, and mix until creamy. Add oatmeal, put aside. In a separate bowl combine the rest of the dry ingredients. Then alternate adding the dry ingredients and the milk to the oatmeal mixture, until blended. Chill for at least two hours, preferably over night.
Remove and roll out onto counter sprinkled with brown rice flour. Cut out circles and bake at 350 degrees until they are golden brown, approximately 10-15 minutes. Let cool. In a double boiler heat dates and lemon zest until consistency is smooth and thick. Top the backside of one cookie with filling and place another cookie on top. Enjoy!
